
Organic Extravirgin Olive Oil Collelago
In Collelago there are 6 hectares of PGI olive groves where biodiversity is the predominant characteristic.
There are approximately 1200 olive trees divided into 12 varieties typical of the Marche region that give life to
with “Collelago” Organic Extra Virgin Olive Oil.
The production area is in Massignano , a hilly area at an altitude of around 180 metres above sea level and just 4 km from the coast, where, at the crossroads between land and sea , particularly valuable and favourable conditions are created for olive growing.
During the olive trees' dormant months, the land is left to grow spontaneously.
Once the vegetative phase resumes, the phases of shredding, fertilizing and pruning follow.
The facilitated manual harvest takes place when the color of the olives begins to change from green to purple, to ensure the right level of oiliness, a high polyphenol content and outstanding organoleptic properties.
At the end of the harvest day, in less than 10 hours the olives are already in the mill and processed with a high-end Mori continuous cycle plant.
Extraction occurs in two phases, with the advantage of reducing the use of water and preserving the oil's beneficial water-soluble substances such as polyphenols.
The final product, filtered through cartons, is stored in stainless steel tanks, away from light and at a controlled temperature between 14° and 18° degrees.
